Trust Your Butcher - David Bouska
I have been asked for many years if I have a cookbook. I have always looked at myself as a meat cutter/butcher not a writer. When this opportunity came up, I decided to show myself that I could write my thoughts down.
Those that know me understand that I like to teach. When I do this, I want explain a lot about why things happen and share the history of meat. This is the basis of how this book is structured. I hope you enjoy reading it.
