The Norwegian salmon is hung cold smoked and dried. This is done with a mixture of beech/oak/willow/ls. And at the end the salmon is smoked with juniper branches. In the process all efforts are made to extract as much moisture as possible from the fillet. This increases the flavour intensity of the smoked product in the ultimate way!
