The 60 varied recipes in this book are based on the use of those accessories. We start with grilling meat and fish in the braai, asado and churrasco way. These are South American skewers and clamps right next to the fire. Large steaks are cut directly from the skewer to your plate. You pull whole fish out of the clamp as buttery smooth and pork belly becomes super crispy. In addition, the plancha is much more versatile than you think; make omelettes, tortillas, thick sandwiches, challenging vegetables, Mexican fajitas and smash burgers. Or go for tasty stews, mussel pots and soups that you prepare in a potjiekos or Dutch oven. We also use these cast iron pans for bread, sweet desserts and fried snacks.
