Robert Herder Chef's knife 'Jeroen Hazebroek' 36 cm Stainless Steel

The large santoku is a true slicer and chopper for heavy-duty work. You can use it to slice a nice big piece of meat as well as chop herbs or chop onions. Putting the balance a little more toward the tip keeps the knife perfectly in your hand when "chiseling," where the blade moves straight up and down.

A large chef's knife is perfect for preparing a large board. In a restaurant, this would be my daytime knife from the moment I walk in the door until dinner begins. You can hold this knife in a pinch grip, but a full fist grip is also quite possible (see video).
The high back makes protecting the fingers of the other hand very easy and safe.

The large knives, which can hold a lot in wet conditions, are only available in stainless for this reason.
