Dry sausage is dried or smoked over a mixture of wood chips and peat. In terms of taste, Frisian, Groningen and Drenthe dry sausage are very different. For example, the Frisian dry sausage and the Groningen sausage are a lot more tender. Fortunately, we can help you find the right spice mix for real Frisian dry sausage. The mix of cloves, allspice, nutmeg and bay leaves make this sausage special.
Ingredients:
Aroma (dextrose, salt, antioxidants (E300, E330), stabilizer (E450)), herbs and spices (pepper, coriander, cloves, ginger, allspice, nutmeg, caraway seeds, chillies, bay leaf), acidity regulator (E575), natural flavouring.
Use: 20 grams per kilogram + 25 grams of nitrite salt 0.6%.
