This originally French book responds to the trend of using as much of the animals as possible because there is more than steak and fillets. The recipes are sorted by 'part' of cow, calf, pig, lamb and poultry: liver, stomachs, brains, rumen etc. about which information first, followed by recipes. They are aimed at chefs with some experience, but are easily executable.
