Butcher Paper: Many competition BBQ teams wrap their brisket, ribs, etc. Prefer Peach Paper (aka Butcher Paper ) instead of aluminum foil. Butcher paper has secured a source of heavy (750gsm) 750mm wide Peach paper in 50m easy to handle rolls to meet these requirements.
Butcher Peach Paper is made by a specialty mill in the USA, where it is also known as Steak Paper. It is specially formulated to reduce the effect of the atmosphere around red meat after cutting, helping to preserve the meat by retaining its color and moisture. Meat placed on BBQ Gourmet Peach Paper retains its blood and juices which improve appearance as well as shelf life.
When smoked, meat wrapped in BBQ Gourmet Peach Paper will keep the juices with the meat, and unlike many inferior paper, it is strong enough to peel right off the meat when wet or dry without tearing or leaving paper to let.
