Pulled Pork Croquettes & Bitterballen


  • 450 gr Pulled Pork
  • 80 g of butter
  • 100 gr flour
  • 0.5 L stock (cold)
  • 50 g whipped cream
  • 1 tsp mustard
  • 7 gr Franky's Pork Prank
  • 0.5 gr freshly ground white pepper
  • 3 sheets of gelatin
  • 2 g parsley
  • 2 egg yolks
  • 4 proteins
  • Crackers

Step 1: Soak the gelatin in a bowl of cold water.

Step 2: Melt the butter in a pan and remove it from the heat. Add the flour and stir well.

Step 3: Return the pan to the heat and continue to stir well until you get a thicker substance. Now add the broth and keep stirring until you get a thick sauce.

Step 4: Add the gelatin, whipped cream, egg yolks, franky's pork prank, mustard and parsley one by one and stir well,

Step 5: Now add the pulled pork and pepper, remove the pan from the heat and stir well. Let it cool and then put it in the fridge for at least 12 hours.

Step 6: Grind the crackers and strain them so that you have fine and coarser pieces.

Step 7: Grab a portion of the filling and roll it in a croquette or a bitterbal sauce and stir it through the fine breadcrumbs. Then grab your croquette or bitterbal and get it through the egg white and then through the coarse breadcrumbs.

Step 8: Heat your frying pan and bake.
