Pork Belly Ponytail By Martijn

- 1 kg Pork Belly Pony Tail
- Angus & Oink (Meat Co Lab) Glazed & Confused - Bbq Sauce & Glaze
- Apple juice
Step 1: Go, Go, Go Fire up the Q! Prepare your BBQ for indirect cooking at 110°C, and add 2 cherry blocks.
Step 2 : Place your Pork Belly Pony Tail on the BBQ and cook it to a core of 72°C.
Step 5: Put some Angus & Oink Glazed & Confused and apple juice (ratio 3:1) in a sauce pan and heat it with the sauce.
Step 6: Thickly glaze your Pork Belly Pony Tail with the sauce and put the lid back on your BBQ for about 10 minutes or until the sauce has dried, then repeat 2 more times.
Step 7: Cut the Pork Belly Pony Tail into fine strips / slices and serve on a fresh bread roll if necessary. some lettuce and sliced cherry tomatoes and yes (!!) when you have some sauce left…. Feel free to add some extra of this to the sandwich !!
