Honey Jalapeño Beef Ribs
Ingredients:
- 2 short ribs
- 2 teaspoons Kosmos Cow Cover Rub
- 2 teaspoons Kosmos Dirty Bird Hot Rub
- 2 teaspoons Kosmos Texas Beef Rub
- 236 ml (1 Cup) Beer of your choice
- 236 ml (1 Cup) Kosmos Honey Jalapeño BBQ Sauce

Preparation:
Step 1: Remove the peritoneum from the spareribs.
Step 2: Mix the three rubs together and rub in your ribs with ¾ of your mixture.
Step 3: Go, Go, Go, Fire up the Q! Prepare your BBQ for an indirect cooking (110°C)
Step 4: Place the ribs on your bbq for around 3 hours
Step 5: Mix the beer with the remaining rub mixture.
Step 6: Make two 'boats' with your aluminum foil where the ribs fit. Remove the ribs from the BBQ and place them in the aluminum boats. Add half of the beer-rub mixture here and fold the long side first and then the short side over it, so that they are well packed. Make sure that the ribs do not pierce the foil during packing, otherwise the moisture will drip away.
Step 7: Put the packed ribs back on the BBQ for approximately 2 hours (hollow)
Step 8: Remove the ribs from the BBQ (careful, they are fragile) and unpack them.
Step 9: Mix the juices of one aluminum package with the BBQ Sauce.
Step 10: Coat the ribs with this mixture and put them back on the BBQ for about 15 minutes.
Step 11: Remove the ribs from the BBQ, cut them and serve with the remaining sauce.
