Flat Iron (Sukade)
Ingredients:
- 1 sucade (split)
- Coarse salt (eg Maldon)
- 1 cup basil leaves
- 2 cups arugula lettuce
- 2 cloves of garlic (large)
- 70 ml of olive oil
- salt
- White pepper
Necessities :
- Ofyr / plancha / grill
- Core thermometer
- Paper roll paper
- Chopper / food processor / auger
- Glaze Brush
- Aluminum foil
Step 1 : Split the citron and pat it dry with some paper towel. Sprinkle generously with coarse salt and let it rest outside the refrigerator.
Step 2 : Go Go Go, Fire Up The Q! Heat up your BBQ to 200°C.
Step 3 : Put the basil, arugula, garlic and olive oil in your chopper and chop this finely. Add salt and pepper to your own taste.
Step 4 : Place the sucade on the grill. This side must be nicely crispy (the salt helps with this). Turn the steak a quarter turn if necessary. If you like it, turn it over and smear it 'the warm' way with your green marinade.
Step 5 : Use your thermometer to monitor your steak. At the core temperature of 52°C degrees you can get steak off the grill. Let it rest for at least 10 minutes in the aluminum foil.
