Diamond tenderloin with bacon herb crust
- 1 Diamond tenderloin
- 100 gr smoked bacon
- 15 blades of chives
- Rosemary leaves
- 1 tbsp mayonnaise
Step 1: Season the diamond tenderloin with salt and pepper and let it rest for at least 30 minutes.
Step 2: Go, Go, Go Fire Up The Q! Prepare your bbq for indirect cooking (150°C)
Step 3: Bake the breakfast bacon crispy on the skillet, and then let them cool.
Step 4: Cut the chives, rosemary and bacon and mix together
Step 5: Coat the diamond tenderloin with mayonnaise and then roll it through the bacon / herb mixture. Place it in the bbq until it has a core temperature of 51°C.
Step 6: Let it rest for 10 minutes in the aluminum foil.
