Chuckwagon Meat Pie
Ingredients:
- 2 kg half to half chopped
- 50 grams of TurnPike Smokers All Purpose BBQ Rub
- 1 pot Stubb's Sticky Sweet BBQ Sauce
- 4 onions cut into rings
- 4 tbsp breadcrumbs
- 2 eggs
- 1 burger bun
Necessities:
Step 1: Mix the minced meat with the Turnpike Smokers All Purpose BBQ Rub, breadcrumbs and the eggs.
Step 2: Make a firm ball of the minced mixture and make sure there is no more air in it.
Step 3: Grease your Loaf 'n bread dutch oven well and push the minced mixture in here, making sure that the corners are well filled.
Step 4: Go, Go, Go, Fire Up The Q! Prepare your BBQ for indirect cooking (120°C). Place the Dutch Oven in the BBQ and put the lid on it.
Step 5: Cook the Meat Pie in about 45-60 minutes to a core of 68°C, remove it from the BBQ and let it rest for about 30 minutes.
Step 6: Remove the Meat Pie from the Dutch Oven but leave the moisture / fat in it !!! Place the Dutch Oven directly above the burning coals on your BBQ, add the onion rings and fry until nicely browned.
Step 7: Now add the Stubb's Sticky Sweet BBQ Sauce and let it simmer for 30 minutes.
Step 8: Toast the casino bread, cut slices of the Meat Pie and add a generous scoop of sauce!
